I've had some version of this evening more times than I can count. It's after 6, I'm standing in front of the fridge staring at half an onion, a bag of spinach I had good intentions for, and enough condiments to stock a diner, hoping dinner will somehow reveal itself. Someone asks what we're eating. I still have no idea, and I'm already calculating whether ordering takeout again is worth it.

The funny thing is, I genuinely love to cook. I'm Lebanese Armenian, and I've been cooking since I was a little girl, first beside my mother and my teta, learning the recipes and rituals that made the kitchen such a big part of our family life. So cooking dinner has never been the part I want to escape. It's everything that comes before it: deciding what everyone will eat, checking what we have, realizing what we don't, grocery shopping, and pulling it all together at the exact point in the day when my decision-making has basically clocked out.

The real problem with weeknight dinner

The annoying part is that you might genuinely like cooking, too. You just don't particularly enjoy figuring out what to cook every single night, checking what's already in the fridge, making a grocery list, getting to the store, realizing you forgot an ingredient, and then starting dinner when you're already hungry.

By Tuesday, the meal plan you meant to make over the weekend never happened. Wednesday gets unexpectedly busy. Thursday's chicken is still frozen. If you're feeding kids, there's the added calculation of what everyone will eat. If you're not, deciding between two adults who are both answering "I don't care" somehow isn't much easier.

I know how this goes in my own house. I can have every intention of cooking that night, but if I haven't planned ahead or made it to the grocery store, suddenly it's evening and I'm scrolling takeout options instead, simply because at that point I need dinner figured out and ordering it is the fastest answer.

When you have 20 minutes: Quick & Easy

Some nights, 20 minutes is about as much as dinner is getting. The Quick & Easy menu has 30+ options each week that can be ready in 20 minutes or less.3 These aren't "quick" dinners that quietly assume you've already washed, chopped, marinated and developed professional knife skills. The point is to get real food on the table fast enough to compete with the temptation to order something: Shrimp & Edamame Ramen Stir-Fry one night, a Crispy Falafel Mediterranean Bowl another (personal favorite), or Thai Coconut Curry Chicken Lettuce Wraps when your usual rotation is starting to feel very, very usual.

Speed is only part of the appeal. According to HelloFresh, 93% of customers feel less stressed about getting dinner on the table, 96% say the service has made their daily lives easier, and 96% report a reduced mental load around meal planning and cooking.7 That last number may be the most compelling. Saving 20 minutes is useful. Not having dinner occupying a corner of your brain all afternoon is arguably better.

When even chopping feels like too much: Low-Lift Dinners

Then there are the nights when 20 minutes somehow still sounds ambitious. Low-Lift Dinners push the shortcut further, with pre-chopped ingredients and pre-prepped sauces designed to get dinner on the table in 15 minutes or less.4 You still get the satisfaction of cooking something at home; someone else has already handled the fiddly parts.

The lineup goes well beyond plain chicken-and-vegetable territory: Southwest Cheesesteak Sandwiches, Green Enchilada Turkey Chili, Cheesy Chorizo & Corn Choripan, Al Pastor Beef & Brown Rice Bowls, Romesco Chicken & Garlic Herb Orzo, Chicken & Udon Noodle Stir Fry, Spinach Ravioli & Turkey Rosa Sauce, and Chicken Al Pastor Tacos. HelloFresh says 88% of Low-Lift meals hit high demand in their first runs, with an average recipe score of 4.0.4

When you're feeding more than one opinion: Family Menu

Feeding a household introduces a different challenge: making one dinner that multiple people will willingly eat. The new Family Menu goes bigger, with larger portions and crowd-pleasing recipes designed with picky eaters in mind: XL Indian Style Butter Chicken, XL Beef Ragu Zucchini Lasagna, XL Japanese Curry Yaki Noodles, XL Palak Paneer & Garlic Butter Naan, rather than making separate meals or defaulting to the same handful of guaranteed winners every week.

HelloFresh says 92% of parents report their kids love HelloFresh, three out of four say their kids eat more vegetables with it, and three out of four say it brings their family together.5 You don't need children for bigger portions and broadly appealing dinners to be useful, either.

When you're about to order takeout: Takeout Favorites

If your delivery history has started to look suspiciously like your meal plan, HelloFresh is also bringing back Takeout Favorites, with recipes inspired by more than 50 countries: Spicy Kung Pao Chicken, General Tso's Chicken & Veggie Fried Rice, Street Cart Chicken Bowls, Chicken Biryani with Garlic Naan, Tandoori Chicken. There's a nutritional argument, too. And you're not locked into one kind of household

The flexibility carries over to the plan itself. You can choose two to six meals per week for two, three, four or six people, with meat & veggies, pescatarian and veggie meal types, and filters for preferences including high protein, low carb, low calorie, low salt, plant-based and low sugar.8

So a two-person household that wants three dinners handled each week can use HelloFresh very differently from a family of six trying to solve most weeknights. That's the point: dinner gets some structure back, without every Tuesday tasting the same.

Meal kits tend to solve the same basic problem in slightly different ways. Blue Apron is known for leaning more chef-driven and recipe-forward, which is appealing when cooking itself is the activity. Home Chef occupies similar easy-weeknight territory but tends to offer a smaller weekly menu.

HelloFresh's advantage is how much choice it gives you without making dinner more complicated in the process: a broad weekly menu, protein customization, multiple serving sizes, dietary preferences, and enough genuinely quick options that a Wednesday night doesn't have to be a cooking project. And then there's the competitor already sitting on your phone: takeout. Who is HelloFresh actually for, and who should skip it?

What I like about HelloFresh is that I still get the part of dinner I grew up loving: something sizzling in a pan, the smell filling the kitchen, and sitting down to food I made for friends and family. It just makes getting to that point easier.

Skip it if...

Skip it if you don't want to cook. HelloFresh probably isn't going to change your mind, because there's still chopping, cooking and cleanup involved. Skip it if you love planning menus and shopping the sales, since that's the part you'd be paying to give away. And know going in that recipes are chosen a week ahead, so an unexpectedly busy Wednesday still has a box waiting for it.

But if you like homemade dinners and find yourself ordering takeout simply because you didn't plan, shop or decide what to make in time, I can see the value. For me, that's the difference: I'm still making dinner. I just don't have to spend nearly as much of my day thinking about it.
